Banana Cake

Ingredients:

¾ cup margarine

1 ½ cups sugar

 2 eggs

1 cup mashed ripe bananas

1 tsp. baking soda

1 tsp. baking powder

1 tsp. vanilla extract

2 cups flour

½ cup apple juice or orange juice

Directions:

In large bowl, mix margarine and sugar. Add eggs, beating after each egg. Add mashed bananas, baking soda, baking powder, and vanilla. Add flour alternately with orange juice, beginning and ending with flour. (Optional: Fold in pecans and coconut and mix well.)

Pour batter into greased 9x13 pan and bake on 350 for 45 minutes or until toothpick comes out dry. Cool and put frosting, if desired.

Banana Cake Frosting

1 ripe banana, mashed

½ cup margarine, melted

1 tsp. lemon juice

2 cups confectioners’ sugar

In a small bowl, mix banana, margarine and lemon juice. Blend in confectioners’ sugar. Mixture may look curdled.
