Hindel's Baba
Ingredients:
2 eggplants
1/2 cup mayonnaise
2 tsp. salt
4 cloves garlic, peeled
Directions:
Wash eggplants and all around the eggplants poke holes with a fork. Place eggplants in 9x13 foil pan and into the oven. Broil on high for 30 minutes. Turn eggplants over and broil on high for another 30 minutes. Take eggplants out of the oven, slice them down the middle, spoon out all cooked eggplant from the shell and into a bowl, add the cloves of garlic and blend with hand blender. Then add the mayo and salt and mix well.
You can make a large quantity easily for a large crowd of about 60 people buy using 9 eggplants, one head of garlic, about 2 cups of mayo and be generous with the salt.
