Lemon Squares
Ingredients:
2 cups flour
1 cup oil
1/2 cup powdered sugar
2 cups white sugar
4 tbsp. lemon juice, fresh or bottled
1 tsp. baking powder
1/2 tsp. salt
4 eggs
2 tsp. lemon zest
Directions:
Preheat oven to 350.
Mix first three ingredients and press down into ungreased 9x13 pan. Bake for 20 minutes.
Mix sugar, lemon, lemon zest, baking powder, salt and eggs. Mix on high speed for 3 minutes or until light and fluffy.
Pour over hot crust.
Bake for 25-30 minutes. When cool cut into small squares. (Sprinkle confectionary sugar over the top before serving).
