Mocha Bundt Cake
Ingredients:
4 eggs
2 cups sugar
1/4 cup coffee diluted in 3/4 cup hot water
2 scoops (teaspoons) vanilla sugar
1 cup oil
2 cups flour
2 teaspoons baking powder
1/4 cup cocoa
Directions:
Preheat oven to 350. Beat eggs and sugar together until fluffy. Add rest of ingredients gradually and mix well until mixture is smooth and silky. Pour into bundt pan. Bake for 40-45 minutes (too long will dry it out!).
Caramel Glaze:
6 tbsp. margarine
2/3 cup brown sugar
4 tbsp. nondairy creamer
1 1/2 cups confectioners' sugar
1 tsp. vanilla extract
3 to 4 tbsp. nondairy creamer or water
Melt margarine in 2-quart saucepan. Stir in brown sugar and 4 tablespoons of nondairy creamer. Bring to a boil, lower flame, and continue cooking for 1 minute, stirring constantly. Remove from heat and cool to lukewarm. Pour into mixer bowl and beat in confectioners' sugar. Add vanilla and eough nondairy creamer until spreadable consistency is reached.
