Linguini Side Dish or Salad
Ingredients:
2 boxes linguini- boil and drain
1 red pepper
1 yellow pepper
1 bag frozen sugar snap peas
1 red onion
1/2 cup soy sauce
1/2 cup sugar
1/2 cup olive oil
Dash ginger
Directions:
Slice the onion into rings. Slice the peppers into long strips. Stir fry the onion, pepper and sugar snap peas in olive oil. Then add olive oil, soy sauce, sugar and ginger and mix well.
Add stir fry to cooked pasta and mix well. Serve hot for side dish or cold for salad.
You can make a large quantity easily for a large crowd of about 60 people buy using 9 eggplants, one head of garlic, about 2 cups of mayo and be generous
