Shula's Sweet Potato Latkes

3 large sweet potatos

1 Potato

1 Zucchini

1 Celery root

Grind all the vegetables in a food processor fitted with a metal blade.  Do not grate, as the pieces will be too big, and the latkes will fall apart in the pan.

Eggs

Salt

Combine grinded vegetables with enough beaten egg to keep the mixture from falling apart.

Season with salt generously and fry until browned on both sides.

If you are making these for the last night or day of Pesach when gebrochtz is permitted, you can add 1 cup of ground matzah that will aid in holding the mixture together.

If your patties are falling apart, pour the batter into a foil pan and you have a delicious kugel! Bake on 375 for 40 minutes.
